RICE
STUFFED PEPPERS RECIPE
This recipe
will teach you how to make Rice Stuffed Peppers. It is a quick
and easy recipe to make. This is a fantastic tasting recipe
to make. The flavours of rice, garlic, black olives and anchovies
mixed together and stuffed in peppers and then cooked in tomato
soup makes a great meal. You can serve them with vegetables
or be like me and have them with a big tossed salad. My family
really love this recipe as we all like rice and peppers and
this is a different way of having them together. This recipe
is for four but I usually double it for my family. If you
do not want to use the cheese just put a piece of anchovy
on top.
Rice Stuffed
Peppers Ingredients
4 peppers
grated cheese
salt and pepper
8 oz cooked rice
1 clove garlic crushed
4 oz black olives chopped
1 1/2 oz can anchovy fillets chopped
1/2 x 15 oz can condensed tomato soup

Peppers Method
First thing to do is preheat
oven to 375 degrees. Remove the tops from each pepper then
scoop out seeds and put the peppers into a pan of cold water
and bring to the boil then drain and stand peppers in an ovenproof
dish. In a large bowl mix together rice, garlic, olives and
the chopped anchovies. Season well and fill each pepper with
the mixture and top with a little bit of grated cheese. Dilute
the tomato soup with half a tin of water and pour it around
the peppers. Cover the dish with a tight fitting lid or a
piece of foil and bake the Rice Stuffed Peppers in centre
of preheated 375 degree oven for 15 minutes.
