ROAST PORK WITH APPLE STUFFING RECIPE

Roast Pork with Apple Stuffing.

This recipe will teach you how to make Roast Pork with Apple Stuffing. It is a quick and easy recipe to make. All my family come home for Sunday lunch so I always make a roast lunch and this Roast Pork with Apple Stuffing is one of my favourite roast to make for the family. I always make apple pie and custard for dessert. My children always say that they love a home cooked meal at my place because their mum cooks the best Roast Pork with Apple Stuffing.

Roast Pork with Apple Stuffing Ingredients

1 Tbs salt
1.5kg loin of pork bone in and rind scored

Apple Stuffing
30g butter
3 Tbs sultanas
1 Tbs apple jelly
1 tsp ground allspice
1 tsp finely grated lemon rind
60g breadcrumbs made from stale bread
1 green apple cored, peeled and finely chopped

Roast Pork with Apple Stuffing Method

Preheat oven to 250 degrees. Using a sharp knife make a pocket in the pork by separating bones from meat leaving both ends intact. Make the stuffing by melting the butter in a frying pan and cook the apple for 2 minutes or until it is soft. Remove the pan from heat and add the breadcrumbs, lemon rind, allspice, apple jelly and sultanas and mix well. Put the mixture into the pocket in the pork and place it on a roasting rack in a baking dish. Rub the rind of the pork with salt and bake for 20 minutes. reduce the heat to 190 degrees and bake for another hour or until meat is cooked through. Let the Roast Pork with Apple Stuffing stand for 10 minutes before carving.

TARRAGON PORK WITH VEGETABLES RECIPE

Tarragon Pork with Vegetables.

This recipe will teach you how to make Tarragon Pork with Vegetables. It is a quick and easy recipe to make. This is a magnificent way of cooking a rolled shoulder of pork. The flavour of the pork with the vegetables and then topped with the tarragon sauce just makes the taste absolutely sensational. I really like making the Tarragon Pork with Vegetables when I am making my husband and I a special dinner for our aniversary.

Tarragon Pork with Vegetables Ingredients

30g butter
2 bay leaves
1 leek chopped
1 turnip chopped
3 Tbs lemon juice
2 onions chopped
2 carrots chopped
750mls chicken stock
3 Tbs redcurrant jelly
12 new baby potatoes
2 stalks celery chopped
1 tsp cracked black pepper
2 Tbs chopped fresh tarragon
1 kg boned and rolled shoulder of pork

Tarragon Pork with Vegetables Method

In a large saucepan heat the butter and add the pork and cook over high heat until browned on all sides then reduce the heat to low and add the onions and leek then cook for 5 minutes or until onions are soft. Next stir in the stock, lemon juice, black pepper and bay leaves and bring to the boil. Reduce the heat and cover then simmer turning meat occasionally for 30 minutes. Add turnip, potatoes, carrots and celery then simmer for 15 minutes or until vegetables are tender and meat is cooked. Take the meat and vegetables from the saucepan and set aside and keep warm. Bring the juices in the pan to a boil uncovered for 2 minutes then stir in the redcurrant jelly and tarragon and simmer for 5 minutes. To serve the Tarragon Pork with Vegetables slice the pork and spoon over the sauce and accompany it with vegetables.
