SPAGHETTI
PUTTANESCA RECIPE
This recipe
will teach you how to make Spaghetti Puttanesca. It is a quick
and easy recipe to make. This
meal is full of flavour and taste and really gives you an
energy boost. My grand daughters really love a good Spaghetti
Puttanesca, so they really enjoy it when they come to nannas
for a meal and I have it made for them. I really feel proud
when my family enjoys my cooking.
Spaghetti
Puttanesca Ingredients
salt and pepper
extra virgin olive oil
1 lb dried spaghetti
1 Tbs dried oregano
1 good handful fresh basil
2 cloves garlic finely chopped
2 handfuls big black olives pitted
3 small dried red chilies crumbled
12 anchovy fillets roughly chopped
2 cans tomatoes drained and chopped
1 handful capers soaked in water and drained
Spaghetti
Puttanesca Method
Cook the spaghetti in salted,
boiling water until just soft. Meanwhile fry the garlic, capers,
olives, anchovies, chilies and oregano in a little olive oil
for a few minutes. Add the tomatoes and bring to a simmer
then continue to cook for 5 minutes until you have a lovely
tomato sauce consistency. Remove from the heat and add the
drained spaghetti into it and toss it over, make sure its
covered with the sauce. Rip all the basil over it and correct
the seasoning then drizzle the Spaghetti Puttanesca with good
extra virgin olive oil.

SPAGHETTI
WITH WILD MUSHROOMS RECIPE
This
recipe will teach you how to make Spaghetti with Wild Mushrooms.
It is a quick and easy recipe to make. The
Spaghetti with Wild Mushrooms is a great spaghetti if you
like mushrooms as I do. The flavour is absolutely exquisite
with the mushrooms, garlic, olive oil, chilies, lemon juice,
parsley and covered in parmesan cheese. Thats what makes this
spaghetti so special.
Spaghetti with Wild Mushrooms Ingredients
3 Tbs
olive oil
1/2 lemon, juiced
1 lb dried spaghetti
2 oz unsalted butter
handful grated parmesan
1 clove garlic finely chopped
11 oz wild mixed mushrooms
1 small dried red chili pounded
1 handful fresh parsley roughly chopped
Spaghetti
with Wild Mushrooms Method
Brush off any dirt from the
mushrooms with a pastry brush and slice the mushrooms thinly.
Put the olive oil in a very hot frying pan and add the mushrooms.
Let them fry fast tossing once or twice then add the garlic
and chili with a pinch of salt, it is very important to season
mushrooms slightly as it really brings out the flavour. Continue
to fry fast for 4 minutes tossing regularly. Then turn the
heat off and squeeze in the lemon juice then toss and season
to taste. Meanwhile cook the pasta in boiling, salted water
until just soft. Drain and add to the mushrooms with the parmesan,
parsley and butter. Toss gently coating the pasta with the
mushrooms and their flavour. Serve scraping out all of the
last bits of mushroom from the pan and sprinkle the Spaghetti
with Wild Mushrooms with a little extra parsley and parmesan.
