GINGER CHICKEN WITH ASIAN GREENS RECIPE
This recipe

Ginger Chicken With Asian Greens Ingredients
2 Tbs peanut oil
2 tsp sesame oil
1 Tbs lemon juice
4 spring onions sliced
1 tsp sesame oil, extra
salt and pepper to taste
1 Tbs fresh ginger grated
4 bok choy ends removed
1 Tbs extra ginger chopped
8 chicken thigh fillets skin off sliced
1 cup dried sliced chinese mushrooms
4 chinese broccoli trimmed and chopped

Ginger Chicken With Asian Greens Method
Combine ginger, lemon juice,
sesame oil and seasoning in a mixing bowl. Add sliced chicken
and coat well with marinade. Cover and place in refrigerator
and marinate for at least 2 hours. To a bowl add 2 cups of
boiling water and mushrooms and leave to soak 20 minutes before
draining and setting aside. Place marinated chicken into a
large bamboo steamer or metal steamer, place onion, mushrooms
and extra ginger on top. Steam covered 25 minutes or until
chicken is cooked through.
In a small saucepan heat left over marinade and bring it to
the boil, reduce heat and allow to simmer slowly until reduced
to 4 tablespoons of fluid. Steam chinese broccoli briefly
and then add to wok with extra sesame oil and peanut oil then
stir fry 1 minute. Serve steamed chicken with onion and mushrooms
onto plates with the stir fried asian greens. Drizzle the
Steamed Ginger Chicken With Asian Greens with 1 tablespoon
of the reduced marinade fluid.
