STUFFED
MUSHROOMS RECIPE
This recipe
will teach you how to make Stuffed Mushrooms. It is a quick
and easy recipe to make.
These asian style Stuffed Mushrooms are a wonderful hors d'oeuvre.
The flavours of the pork mince, shallots, celery, water chestnuts,
green ginger, sherry, soy sauce and hoi sin sauce in the mushrooms
make them taste absolutely fantastic.
Stuffed
Mushrooms Ingredients
flour
salt and pepper
oil for deep frying
500g mushrooms
Stuffing:
4 shallots
1 egg white
1/4 tsp salt
1 stick celery
1/2 red pepper
2 tsp cornflour
2 tsp soy sauce
1 Tbs dry sherry
250g pork mince
1 tsp hoi sin sauce
2.5cm piece green ginger
1/4 cup water chestnuts chopped finely
Batter:
1/2 tsp salt
1/4 cup milk
1/4 cup water
1/3 cup cornflour
1/3 cup plain flour
1 tsp baking powder
Stuffed
Mushrooms Method
First with the mushrooms remove
stems and finely cut them up to add to the prepared stuffing
when you make it and mix well. To make the stuffing in a large
bowl add mince, chopped shallots, seeded and finely chopped
red pepper, celery finely chopped, water chestnuts, green
ginger peeled and grated, sherry, soy sauce, egg white, hoi
sin sauce, salt, and cornflour and mix well. Fill the mushrooms
with the stuffing in the centre.
To make the batter sift dry ingredients into a bowl and make
a well in the middle and gradually add the milk and water.
Mix to a smooth batter. The mushrooms have to be coated with
flour seasoned with salt and pepper and then dipped in prepared
batter. Add the mushrooms a few at a time into the deep hot
oil, fry until golden brown and cooked through this only takes
around 4 minutes. Do not have oil to hot or the Stuffed Mushrooms
will brown quickly and not be cooked through.
