STUFFED FISH RECIPE

Stuffed Fish.

This recipe will teach you how to make Stuffed Fish. It is a quick and easy recipe to make. There is nothing better than catching a couple of great bream or any sort of fish and cleaning them and then stuffing them and pouring wine over them and brushing them with butter and putting them in the oven to roast. This is how I cook our fish we catch when we are on holidays and they taste so excellent especially when you have fresh caught fish. My husband likes to cook up some potato wedges to have with his Stuffed Fish but I prefer boiled jasmin rice with mine.

Stuffed Fish Ingredients

1 Tbs olive oil
2 Tbs currants
2 tsp lemon juice
60g butter melted
1 egg lightly beaten
1 clove garlic crushed
250mls dry white wine
2 Tbs pine nuts toasted
freshly ground black pepper
1 Tbs chopped fresh parsley
1 small onion finely chopped
1 Tbs chopped fresh rosemary
2 rashers bacon finely chopped
60g breadcrumbs made from stale bread
2 whole fish about 600g each cleaned and scaled
3 spinach leaves stalks removed and leaves finely shredded

Stuffed Fish Method

Preheat oven to 350 degrees. In a non stick frying pan heat the oil then cook the oinion and garlic for 4 minutes or until onion is soft then add the spinach and bacon and cook for another 5 minutes or until spinach wilts then remove from heat. In a large bowl combine the spinach mixture, currants, pine nuts, breadcrumbs, egg, lemon juice, parsley and rosemary then season with pepper and mix well. Fill the cavities of each fish with equal portions of the mixture then close securely using skewers. Place the fish in a greased shallow baking dish and pour the wine over them and brush the fish with butter. Bake the fish for 35 minutes or until the fish flakes when tested with a fork. Make sure to baste frequently during cooking. Serve the Stuffed Fish with wedges or jasmin rice.

THAI FISH RECIPE

Thai Fish.

This recipe will teach you how to make Thai Fish. It is a quick and easy recipe to make. These grilled fish with their spicy flavour are my families favourite way of having their fish. The sensational chili marinade is made up of red chilies, garlic, ginger, coriander, lime juice, peanut oil, cumin and black pepper and that is what gives the Thai Fish their magnificent spicy flavour.

Thai Fish Ingredients

4 small whole fish

Chili Marinade:
2 Tbs lime juice
2 Tbs peanut oil
1 tsp ground cumin
1 clove garlic crushed
2 tsp grated fresh ginger
freshly ground black pepper
1 1/2 Tbs chopped fresh coriander
2 small fresh red chilies seeded and finely chopped

Thai Fish Method

Rinse the fish under cold running water and pat them dry with absorbent kitchen paper. Cut the flesh of the fish with a sharp kitchen knife to make 3 diagonal cuts along the body then place into a shallow dish. Make the marinade by combining chilies, garlic, ginger, coriander, lime juice, oil and cumin in a bowl then season to taste with black pepper. Pour the marinade over the fish and rub well into the flesh. Cover and leave the fish in the marinade for 2 hours in the refrigerator. Remove the fish frome the marinade and grill under a medium heat for 8 minutes or until fish flakes when tested with a fork. Baste frequently with the marinade and turn halfway through cooking. You can also cook the Thai Fish on a barbecue if you prefer.
