SWEET POTATO AND LENTIL SOUP RECIPE

Potato and Lentil Soup Ingredients
1 tsp all spice
250g red lentils
1 large onion sliced
1 tsp dried chili flakes
1 clove garlic crushed
6 cups vegetable stock
salt and pepper to taste
1 cup fresh coriander chopped
2 medium orange sweet potatoes peeled and sliced

Potato and Lentil Soup Method
Saute onion and garlic in a
large non stick saucepan with 2 tablespoons of water until
soft. Add stock, sweet potato, lentils, chili and all spice
then bring to the boil, reduce heat and simmer 30 minutes
or until potato is soft. Puree potato and lentils in a food
processor. Stir through seasoning and coriander and now your
Sweet Potato and Lentil Soup is ready to eat.

This
recipe will teach you how to make Thai Style Pumpkin Soup.
It is a quick and easy recipe to make.
This soup recipe is fantastic tasting with the flavours of
onions, curry paste, water, coconut milk, pumpkin and vegetable
stock it is the best pumpkin soup I have ever had. My husband
really likes it as it taste like curry only as a soup and
the added coconut milk just is so creamy and nourishing in
the Thai Style Pumpkin Soup.
Thai Style Pumpkin Soup Ingredients
1 Tbs water
1 Tbs curry paste
2 onions, chopped
2 cups coconut milk
2 cups
vegetable stock
750g peeled pumpkin cut into bite sized
pieces

Pumpkin Soup Method
Into a large saucepan place
onions, curry paste and water and stir fry for 3 minutes.
Stir in pumpkin pieces, stock and coconut milk and then bring
to the boil. Lower heat and cover with lid and simmer 20 minutes
or until pumpkin is tender. Do not over cook. Puree half the
soup in a blender then return to saucepan with unprocessed
soup. Heat and serve the Thai Style Pumpkin Soup garnished
with chopped chives.
