TABBOULEH
STUFFED TOMATOES RECIPE
This recipe
will teach you how to make Tabbouleh Stuffed Tomatoes. It
is a quick and easy recipe to make. Some people do not like
tabbouleh but done the right way it tastes delicious. These
Tabbouleh Stuffed Tomatoes are one example as the mixture
of burghul, spring onions, garlic, parsley, mint, olive oil
and black pepper mixed together and stuffed in tomatoes and
then baked gives them a magnificent taste that I am sure anyone

family and I am sure they will enjoy them as much as my family
do. I usually serve the Tabbouleh Stuffed Tomatoes with potato
wedges.
Tabbouleh
Stuffed Tomatoes Ingredients
4 large tomatoes
Tabbouleh Filling:
3 Tbs burghul
1 Tbs olive oil
3 cloves garlic crushed
8 spring onions chopped
freshly ground black pepper
2 Tbs finely chopped fresh mint
3 Tbs finely chopped fresh parsley

Stuffed Tomatoes Method
The first thing you must do
is prepare the tomatoes by cutting the tops of them with a
sharpe knife then scoop out the pulp using a teaspoon then
chopped and serve the pulp. Put the tomatoes upside down on
absorbent paper to drain. To make the tabbouleh filling place
the burghul in a bowl and cover with boiling water and set
aside to soak for 10 minutes. After the 10 minutes drain the
burghul and put it in a large bowl then add the tomato pulp,
spring onions, garlic, parsley, mint and oil then mix to combine
and then season to taste with black pepper. Spoon the filling
into the tomato shells and put them on a lightly greased tray
and bake the Tabbouleh Stuffed Tomatoes for 10 minutes or
until heated through. Great served with potato wedges.

CIGARS WITH PESTO RECIPE
This
recipe will teach you how to make Cheese Cigars with Pesto.
It is a quick and easy recipe to make. Now
I have to abmit these are one of my favourite appetizers and
I usually make a coriander pesto. These Cheese Cigars with
Pesto have the sensational taste of bread, english mustard,
parmesan cheese, mozzarella cheese, chives, cayenne pepper,
egg and oil for cooking them in. When you see the Cheese Cigars
with Pesto cooked up they look so enviting and once you have
one you keep coming back for more. These appetizers served
with the pesto sauce just gives them that extra special flavour.
I have to admit though my grandchildren love them with plain
old tomato sauce.
Cheese Cigars with Pesto Ingredients
cayenne
pepper
1 egg lightly beaten
vegetable oil for cooking
2 tsp hot english mustard
1 Tbs snipped fresh chives
60g grated mozzarella cheese
4 Tbs finely grated parmesan cheese
12 slices white sandwich bread crust removed
Pesto:
60g pine nuts
125mls olive oil
2 cloves garlic crushed
60g grated parmesan cheese
3 large bunches fresh coriander

Cigars with Pesto Method
Take
each bread
slice and roll it with a rolling pin to flatten it as much
as you can. In a bowl add mustard, parmesan cheese, mozzarella
cheese, chives and cayenne pepper to taste and combine it
all together. Divide the mixture between the bread slices
and spread over half of the slices then brush the unspread
halves with egg and then roll each slice up tightly using
the egg to seal rolls. Arrange them on a serving tray then
cover and refrigerate until you are ready to cook them. Heat
2cm of oil in a frying pan and when it is hot add the cigars
and cook them a few at a time until golden all over then drain
on absorbent paper. To make the pesto add the coriander leaves,
garlic and pine nuts to a blender and blend until finely chopped.
With the blender on slowly pour in the oil and blend until
smooth then add the cheese and blend again then serve the
Cheese Cigars with Pesto.
