Traditional Caesar Salad Method:
Separate lettuce leaves and rinse thoroughly,
discarding any discoloured or wilted leaves.In four serving bowls
arrange 4 leaves per bowl around outside of bowl. Chop remaining
leaves in half and lengthways and place in a large mixing bowl.
Heat 1 tbsp of olive oil in a frypan and cook bacon until crisp
and browned. Mix bacon,12 anchovies and shaved parmesan through
chopped lettuce.
In a small bowl combine extra olive
oil, sour cream, anchovy oil,
garlic, runny eggs, tabasco sauce, mustard powder, lemon juice and
seasoning, whisk to combine well.Pour dressing over lettuce, bacon
and anchovies. Divide lettuce mixture amongst bowls, ensuring that
whole lettuce leaves remain to the outside of the bowl. Place boiled
eggs on top and garnish with extra parmesan cheese.
