SALAD RECIPE
This recipe
will teach you how to make Vegetable Salad. It is a quick
and easy recipe to make. This
barbecue recipe is one of my favourites. Vegetable Salad is
absolutely sensational with the mixture of capsicum, squash,
zucchini, eggplant, tomatoes and red onion and then add a
wonderful dressing just try this salad it is so tasty.
Vegetable
Salad Ingredients
4 zucchinis
8 egg tomatoes
8 baby eggplant
1 large red onion
2 red capsicums sliced thickly
4 medium yellow squash halved
Dressing:
1 clove crushed garlic
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil

Salad Method
Prepare the vegetables first
by cutting the onion and tomatoes into eight wedges each and
thinly slice eggplant and zucchini lengthways. On a heated
oiled barbecue plate cook onion, tomatoes, eggplant, zucchini,
squash and capsicum in batches until vegetables are browned
and just tender. Combine the Vegetable Salad on a serving
platter. Drizzle with dressing, toss gently to combine.
Dressing: Combine all ingredients for dressing in a
screw top jar and shake well.
