WARM
ROCKET SALAD RECIPE
This recipe
will teach you how to make Warm Rocket Salad. It is a quick
and easy recipe to make. Most people only eat cold salads
but it is a really lovely treat to still have a salad in winter
that is warm. The flavour of the bacon, pine nuts, onion,
olive oil, thyme and vinegar served on rocket leaves and topped
with parmesan cheese makes an absolutely fantastic tasting
warm salad.
Warm Rocket
Salad Ingredients
olive oil
balsamic vinegar
4 sprigs thyme
2 medium red onions
A good handful pine nuts
4 big handfuls rocket leaves
8 whole rashers smoked streaky bacon
a piece of parmesan cheese for shaving
Warm Rocket
Salad Method
First thing to do is peel and
quarter the onions into 8 pieces from each onion. In a hot
frying pan fry the rashers of bacon until they are crisp.
After you have done that add a couple of tablespoons of olive
oil to the pan and add the thyme, pine nuts, onions and a
pinch of salt and stir around and fry on a medium heat for
about 4 minutes until it is caramelized and sweet, do not
let it go black. Arrange your rocket leaves in a beautiful
salad bowl and put all the other ingredients in with the rocket
leaves and mix around adding a generous drizzle of the balsamic
vinegar. This will make a great natural salad dressing as
it will mix with the olive oil. Shave the parmesan cheese
and put on top of the Warm Rocket Salad and serve immediately.
